It's March (although it still feels like February here in Indiana, ugh)! I LOVE spring & all that it brings.
After the harsh winter we have had here, who isn't ready for Spring?!?
After finishing dinner last night, Nate & I were just chatting around our kitchen table with a good friend and I just got in the mood for a dessert. Luckily, I had planned to one this week & it was SUPER simple. So at about 10pm, I decided to whip this baby up. Let me tell you, best decision I've made this week :) It hit the spot, and I justify that it is healthy because it has mixed berries in it :) The berries also add to the "spring" thinking I have going on right now!
Trust me..healthy & SO delicious.
I feel terrible, but I honestly have no idea where I got this recipe from! I printed the recipe out about a year ago, the first time I made it, but for some reason the link or website never printed out.
Unfortunately I have pregnancy brain at the moment too, so trying to remember it would be pushing my brain a little too far!
Mixed Berry Cobbler:
Ingredients:
16 oz. frozen mixed berries
2 Tbsp. lemon juice
2/3 c. packed light brown sugar
1/2 c. flour
2/3 c. quick cooking oats
1/3 c. butter, softened
3/4 tsp. cinnamon (or Nutmeg)
1/4 tsp. salt
Vanilla ice cream, optional
Directions:
Pour frozen berries into an 8x8 baking dish.
Drizzle with lemon juice.
In a medium size bowl, combine the next 6 ingredients. When combined, the mixture should be kind of dry and crumbled.
Pour mixture on top of berries and distribute evenly.
Bake at 350* for 20-25 minutes.
Serve hot topped with a scoop (or 2) of vanilla ice cream, if you wish.
See? So easy that I made it at 10pm & still enjoyed a little bit before I went to bed!
