I came across THIS Chicken Parmesan recipe a couple months ago on my favorite Pinterest :) I made it and thought it was SO good, and then forgot about it. Because mom brain is so real.
Thankfully I was going through some older pins {am I the only on guilty of pinning a million things and then never looking at it again? Or only trying about 1/3 of the things I pin?} and I found this recipe and remembered it being good, so I decided to make it again this week.
I'm all about quick + easy in this crazy stage of life I have. Two toddlers running around while I'm trying to make dinner in the kitchen...it's chaos hour around here. Ya feel me?
ANYways. This recipe is easy, quick + SO good. I told Nate that it's definitely one of my favorites I've made. Nate said "It's SO good." and then said it again when he went back for seconds :)
Few things to note:
1. This recipe says it serves 4. My family of four ate this entire dish, with no leftovers. I would totally double this because I think it would reheat well for leftovers. Especially if your 4 people are 4 adults instead of 2 adults + 2 toddlers, then I'd definitely make double!
2. It says to put the chicken in with the cheese on top to melt the cheese, then once it comes out to put the sauce on. Instead, I put a layer of Mozzarela, covered the chicken in the pasta sauce, and then put another layer of Mozzarella BEFORE putting in the oven to heat. I just like the cheese and sauce to be warm and gooey together :)
3. I changed just a few things from the original recipe...but it turned out so good. I'm pretty sure you can't mess this up.
